Cupuaçu is the fruit from a tree that has its origin in the Brazilian Amazon, and is related to the Coca Tree.
The tree can reach up to 20 meters height. The leaves are long and have a rusty appearance on one of the sides. The Flowers are big with a reddish color and grow on the branches (differently from other theobromacae). The fruits are round or egg shaped reaching up to 25 cm of length, having a dark brown smooth peel. The white pulp of the fruit surrounds a central seed and has an sweetish aromatic taste.
Cupuaçu pulp can have several applications in end use products such as: ice creams, juices, vitamins, jellies, fermented alcoholic beverages, liquors, chocolate fillings. This Amazonian fruit is also used to produce the “cupulate”, a product very similar to chocolate.
